The Sandpiper

rum - lime -coconut - ginger

• 1 part rum

• 2 parts ginger beer

• lime juice (half a lime)

• ½ part cream of coconut

• few sprigs of cilantro

Pour ginger beer over ice in a high ball glass

Shake rum, lime juice, coconut cream, and cilantro in a shaker

Strain into glass with ginger beer

Stir gently and garnish with cilantro sprig

This is maybe the perfect beach cocktail. It has the lime of the margarita, the coconut of the piña colada, and the ginger of the dark & stormy, and the cilantro tops it all off with a kind of breezy herby note.
